FILLED MINCEMEAT COOKIES


1 cup butter

1 cup sugar

2 egg yolks

4 tablespoons milk

1 teaspoon vanilla

3 1/2 cups King Arthur flour

3 teaspoons baking powder

1/4 teaspoon nutmeg

1 cup Bean's mincemeat


Cream together the butter and sugar.  Mix in the egg yolks, milk and vanilla.  Add the flour, baking powder and nutmeg, a little at a time.  Mix until it forms a stiff dough, adding more milk if necessary.  Chill the dough.

Roll out on a floured board.  Cut with a doughnut cutter, cutting one half with centers cut out and one half whole.  Put the whole rounds on a greased cookie sheet.  Spread with mincemeat.  Top with the rounds with the centers cut out and seal around the outside.  Add more mincemeat in the cut-out if needed.

Bake at 375F for 12 minutes, or until done. 

 

 

MINCEMEAT GOODIES


1 cup butter

2 cups sugar

3 eggs, well beaten

1 cup Bean's mincemeat

4 1/2 King Arthur cups flour

1 teaspoon baking soda

1 teaspoon ground cloves

1 teaspoon nutmeg

1 teaspoon ground ginger

1 teaspoon salt

1/2 cup hazelnuts, chopped

96 whole maraschino cherries


    Cream the butter and sugar together.  Add the eggs, a little at a time, until thoroughly mixed.  Add the mincemeat and mix well.     

     Combine the flour and the other dry ingredients.  Add to the mincemeat mixture in three parts, mixing well each time.  Add the nuts, mix well, and drop by spoonfuls on a greased cookie sheet.  Put a maraschino cherry in the center of each cookie.

    Bake at 375F for 12 minutes or until done.
